A man arrested after a dramatic police pursuit across suburban Sydney and the Harbour Bridge remains behind bars.

Sean Gray, 33, did not apply for bail and it was formally refused in Parramatta Local Court on Sunday.

He was charged with wounding with intent, sexual assault and police pursuit after a chase on Saturday that spanned three motorways.

It ended outside Surry Hills police station after police road spikes had burst the car's tyres and officers fired two rounds of a chemical agent into the BMW to force out the driver.

The pursuit followed the stabbing of a woman, 33, during an alleged domestic incident in Kensington on Saturday morning.

She remains in a stable condition in hospital.

Gray was remanded in custody and is due to appear at Central Local Court on Thursday.
