A Melbourne man has lost a staggering 56kg and gained a new outlook on life by following a potato-only diet for nearly 365 days.

At the beginning of 2016, a weigh-in of 151kg triggered Elwood father-of-one Andrew Flinders to combat his food addiction and expanding waistline by embarking on a drastic food diet consisting of just potatoes.

"I wanted to change the way I thought about food so that it’s not really controlling my life. Food is fuel kinda thing," he told 9news.com.au in February.

Today, Mr Taylor reports he had lost a total of 56.2kg. He said that despite the restrictive eating plan of white and sweet potatoes, his latest doctor’s check-up and blood test results revealed "everything was good".

The 36-year-old said his weight loss has helped him gain a new perspective on the world and his relationship with food.

"The simple act of eating potatoes has gotten so much bigger than I had imagined… I’ve learned how to get excitement from other areas of life," he said.

"Make your food boring and your life interesting is my new catch-phrase".

Mr Taylor’s weight-loss has spawned a blog, a book, and running a support group to help coach a people to "get their health back".

Mr Taylor said that group membership currently sits at around 500 people.

He also said that he expects to "relax" his diet a bit more in 2017 to include "plant-based wholefoods", but "no meat, dairy or eggs".
