Meet the chefs set to serve G20 delegates around 100,000 meals

Over a period of three days, international delegates gathered in Brisbane for the G20 will be served an estimated 100,000 meals, including more than 30,000 pieces of fruit, 10,000 baked goods and 25,000kg of fresh produce.

Meet the men who makes that happen.

"It is a challenge but it's a fun challenge and it's a challenge that's based on preparation and experience," Brisbane Convention and Exhibition Centre's executive chef Martin Latter said.

"All up it's about two years worth of preparation, planning and working with suppliers."

The Brisbane Convention and Exhibition Centre is hosted 4000 international delegates and more than 3000 media representatives for the G20 summit.

During that time, a team of 700 Convention Centre kitchen and catering staff will serve them:

- about 100,000 meals

- bake 10,000 croissants

- prepare 30,000 pieces of fruit

- hand out 100,000 sweets and lollies

All up, the centre's head of food and beverage Lawerence Bolton estimates about 25,000kg of fresh produce will be used by the Convention Centre's kitchen during the G20.

"Security is another element, not to mention catering for different cultures, different tastes," he said.

Mr Latter and his team are determined to put Brisbane on the culinary map, hoping the various world leaders come away with positive impressions.

"Brisbane has some of the world's best produce and... this is our chance to sell it on a world stage," he said.

But the logistics do not stop at the dinner table, with more than 100km of cables laid throughout the centre, while 8392 chairs will be on offer for delegates, media and staffers.

Delegates will be able to use 44 meeting rooms across the entire, five-level complex, which has a total floor space of 172,000 square metres - or about 24 football fields.
