Chocolate factory owner reveals secret to his success

Tucked away in the New South Wales Riverina is a remarkable little factory.

Inside the brick and timber, which was once a thriving flour mill, are dozens of busy hands whipping up, baking and wrapping 200 tonnes of delectable chocolate, and 150 tonnes of smooth liquorice.

For the owner, Neil Druce, the recipe for success was simple.

"You have to be mad. Mad in that crazy sense. And when we employ people, we say it does help to be a bit crazy - actually, it more than helps, you need to be."

Transitioning from a family of farmers to confectioners meant a bit of fudging along the way for the Druce family, but thanks to some friendly advice, they decided to use all the left over wheat from the mill, and put it to good use - liquorice.

"When I look back I realise, all the windows were broken, there were pigeons living everywhere. But, somehow in my mind - I just thought it was a palace," Mr Druce said.

Now, thousands of tourists visit his "palace" to sample some of the factory's famous organic treats, and even have a crack at making their own freckles and rocky road.
