A Brisbane bakery is facing a bitter insurance dispute following a storm that left its store in ruins two months ago. 

Gathered Bakers is trading out of a makeshift kitchen and tens of thousands of dollars in the red while waiting on urgent repairs.

Bronwyn Jukes became locked in an ongoing battle with her landlord's insurer, CGU, after the freak storm on December 16.

"It's like talking to a blank wall," Jukes said.

"They say, 'yep, OK, thank you', but there's zero being done to move anything along."

Jukes said engineers who assessed the site claimed it couldn't be occupied and recommended urgent repairs.

She said eight weeks later she is still waiting for a quote. 

"I'm pretty stressed out, there's just so many things to think about," she said.

Jukes can't operate the wholesale side of the business right now, with limited oven space resulting in production at an all time low.

"We're just doing what we can, which is sometimes half of what we can usually do," Jukes said.

In a statement, CGU told 9News it was working to finalise the settlement for the repairs as quickly as possible and reviewing a builder's quote.
